In the kitchen with…
Maison, the new Paris restaurant from rising culinary star Sota
Atsumi, is easy to spot—as the name suggests, it looks like a
house and is the only such dwelling on Rue Saint-Hubert.
“Ever since I started cooking, my customers longed for a
restaurant where they would be greeted like my friends and
family.” Many of those customers came to know and love
Atsumi during his time at Clown Bar, where his pithiviers
de canard (puff pastry duck pies) became foodie legend.
Blending Japanese and French cooking, Maison’s menu uses
fresh, seasonal ingredients and changes daily. The airy dining
room has an open kitchen and bar with a large table d’hôte at
its center. And as for the company logo, it was designed by
none other than filmmaker David Lynch, who Atsuma’s wife
met at fine art printing studio Idem Paris. “I was convinced
that his creative power would give me energy,” says the chef.
An extractor fan with a difference, Caple’s
new island ceiling hood looks nothing like
the bulky metallic overheads of yesteryear.
“Our new hood will complement a modern
kitchen design in terms of its design
aesthetic,” says the company’s product
manager Luke Shipway. “This style tends to
reflect the latest lighting choices for the
kitchen/living space.” The fan has four
speeds, a dimmable 14W LED light, and an
easy-to-clean stainless-steel grease filter.
